Daikon Smashed Avocado Toast

Daikon radishes can be white or purple. Some measure up to 16 inches long.

This season, local chefs are head-over-heels with our farmers’ purple Daikon, and we can’t blame them. From its crisp texture to its beautiful purple color, its a people pleaser.

Packed with Vitamin C and fiber, we love this peppery, crunchy brassica root sliced raw. This recipe, inspired by Homegrown Provisions, can stretch as far as the daikon is long. (Some varieties can grow more than 16″ in length!)

INGREDIENTS

New South Daikon Radish, washed & sliced into discs
Serenity Farms Sourdough, sliced
Avocado, smashed
Coconut oil
Squeeze Lemon juice
Sprinkle of salt

STEPS
  1. Wash and slice your daikon radish. We recommend using a mandolin.
  2. Slice and smash your avocado into a small bowl. Squeeze a little lemon juice on top.
  3. Toast your sourdough slice(s).
  4. As soon as the toast pops, spread your coconut oil and avocado on top. Layer the daikon discs, and salt as desired.
