Pan-seared Shishito Peppers

We can hardly call this a recipe, because it’s so dang simple. The pure flavor of smoke, umami and salt makes this a rare and delicious treat. Enjoy on your porch before supper with your favorite beverage.

INGREDIENTS
New South shishito peppers
A few splashes of olive oil
Flake salt (Malden is a good brand)

STEPS
Add oil to the skillet
Heat to medium-high heat
Throw in the peppers
Push them around with a spatula so all sides sear/blister equally (about 5 minutes)
Remove from heat, sprinkle with salt, enjoy!
